Banana Bread
Banana bread with spices
This banana bread combines the taste of ripe banana with distinct cinnamon, cloves and nutmeg flavour. Unlike many other banana breads recipes, banana bread made from this recipe will only need 25-30 minutes in the oven. Serve with your afternoon tea or keep in your backpack as a handy snack. You can also add ice-cream and turn this banana bread into a delicious desert. |
Banana bread ingredients
- 4 ounces of butter
- Grease and flour for the pan
- ¾ cup of brown sugar
- Enough bananas to create ¾ cup of mashed banana; typically 2-3 medium sized bananas.
- 1 large egg
- ¼ cup of sour milk
- 1 tsp of vanilla extract
- 1 tsp of ground cinnamon
- 1/8 tsp of ground cloves
- 1/8 tsp of ground nutmeg
- 1 ½ cups all-purpose flour
- 1 ½ tsp of baking powder
- ½ tsp of baking soda
- ½ tsp of salt
Banana bread preparation
- Preheat the oven to 350° Fahrenheit.
- Place 4 ounces of butter in room temperature until it becomes soft and easy to handle.
- Carefully grease an 8 or 9 inch square pan and flour it.
- Cream butter and brown sugar together in a large bowl.
- Peel and mash banana until you have ¾ cup of mashed banana. This will usually require 2-3 medium sized bananas.
- Beat in egg, sour milk, vanilla and banana with the sugar-butter in the large bowl until you have a smooth blend.
- Ground cloves, nutmeg and cinnamon, unless you have purchased variants that are already grounded.
- Place grounded cloves, nutmeg and cinnamon in a separate bowl and add flour, baking powder, baking soda and salt. Stir until the dry ingredients are combined.
- Gently stir the mix of dry ingredients into the banana bread batter in the large bowl. Only stir until moistened, there is no need to overdo it.
- Pout the banana bread batter into the grease and floured pan.
- Place the pan in the preheated oven and cook until ready. This banana bread will usually be finished after 25-30 minutes. Check if the cake springs back when you tough it gently with your finger.

- Banana, enough to produce ½ cup of mashed banana
- ¼ tsp of white vinegar
- 1/8 tsp of salt
- 3 ½ cup of sifted confectioners sugar
