Banana nut bread preparation
- Preheat the oven to 325° Fahrenheit.
- Take butter or margarine out of the refrigerator and place in room temperature. This will make it easier to blend the butter/margarine with the other ingredients later.
- Grease a 5x9x3-inch loaf pan and flour it.
- Place all-purpose flour, baking powder, baking soda and salt in a large bowl and sift the dry ingredients together.
- Chop pecans and/or walnuts until you have ¾ cup of chopped nuts. Don’t hesitate to vary this banana nut bread by using other nuts, such as hazel nuts. This banana nut bread recipe goes well with most types of nuts.
- Carefully wash an orange and grate peel until you have 2 teaspoons of grated orange peel.
- Cream butter or margarine together with white sugar or brown sugar until you have a fluffy mix.
- Beat the eggs, one at a time, until they are really fluffy.
- Peel and mash ripe bananas until you have 1 cup of mashed banana. This banana nut bread will typically require at least 2 medium sized bananas.
- Add the eggs and the mashed bananas to the butter/margarine mix and stir until you have created a smooth blend.
- Add the egg-banana-butter blend to the large bowl with the dry ingredients and stir.
- Add the chopped nuts and the grated orange peel to the banana nut bread batter.
- Pour the banana nut bread batter into the greased and floured pan.
- Bake at 325° F. This banana nut bread will usually need around 80 minutes in the oven. The banana nut bread is ready when it looks golden and a tooth pick inserted to the centre of the bread comes out clean.
- Take the banana nut bread out and leave it to cool in the pan for approximately 10 minutes.
- Empty the pan and place the banana nut bread on a wire rack. As mentioned above, this banana nut bread will taste even better if you allow it to rest over night before serving it.
